    androidqueen blanched broccoli w/ this sauce: 2 eggs 12 oz evap (1 can) milk 2 tsp corn starch ~450g cheddar ~100g ~jack warm milk to simmer, whisk eggs & corn starch separately, add evap milk slowly to temper, transfer custard back to pot, stir constantly adding grated cheeses until smooth

      androidqueen unless you’re really ambitious this will make enough sauce for like three adults and still leave enough for like 6-8oz of pasta the next day
