  1. Last weekend after 10+ years of occasional 1000 grit sharpening, i finally bought a 240 grit stone and re-formed the edges on all three of my chefs knives and then finished each with my 1000 grit stone. judge me all you want. i wish i had done this ~6 years ago. night and day.
